I, Moosefish, do solemnly swear I will not start taking pictures of all my food in order to post to the day's coolest social media platform.

Ok. So with that out of the way, check out the incredible food at The Remote Resort where we stayed in Fiji! Seriously, it was amazing. (And those of you that have the unfortunate luck to eat with me know that I'm fine with PBJ or a bag of Biscuits and Gravy so if I'm raving about the food, it must really be great.)

Each day started with a menu delivered with breakfast. (We ordered breakfast the night before.) All we had to do was circle the items we wanted and specify a time. They'd be ready for us. Or if we wanted something different, we could do that, too.

But why deviate from the menu? We had New Zealand Lamb Cutlets with lemon, feta, brown rice and bele (local spinach) pilaf. We had Coconut Curried Beef with steamed rice, roti, tomato-chilli relish, tamarind chutney and raita. We had Thai Beef Salad with lemongrass dressing. Every day was a new adventure because none of these things were foods I would ever have thought to eat.

And don't forget deserts. Coconut Buns drizzled with coconut syrup and served with a dollop of jam. Creamy Chocolate Gelato with white chocolate shavings and salt-roasted cashew nuts. Bush Lemon and Thyme Tart served with coconut ice cream.

Just about the only comfort item we touched was Coke and that was sparingly ordered. Why bother when there's a cocktail of the day like the Dodomo or a Gin and Sin? Kava wasn't really something we paired with a meal, but we gave it a shot.

Unlike on Kiritimati Island where just about everything we consumed was flown in with us, a lot of what we ate in Fiji was local. Oh, like somewhere else in the country? Maybe. Or maybe it was grown on the property. It's an old coconut plantation so there's a history of farming and the jungle was full of mangos, bananas, papayas, and pineapples.

So if you're a foodie, you're not going to go wrong at The Remote Resort. And if you're like me, buck up and try something new. It might be great.
